Healthy plate - Bran Cereal Fruit Loaf

This recipe was submitted by Cheryl L. Johnson of Medford, who got it from her mom, who got it from a co-worker. Johnson isn’t sure where the co-worker got it, but now Mail Tribune kitchen tester Shonna Zimmerman has it, and as is her way, she suggests a few refinements.
The first time she made it, Zimmerman thought it was too sweet, so she cut the sugar allotment in half. The result was just right, she said.
People with sucrose concerns might also consider substituting one of the natural sweetener options, such as agave syrup.

1 cup All Bran Cereal
1 cup sugar (can be cut to 1/2 cup)
1 cup fat-free milk
1 cup raisins
1 cup flour
1 tsp baking powder
Pinch of salt

Pre-heat oven to 350 degrees.
Mix together the All Bran, sugar, milk and raisins. Let stand for 30 minutes.
Then add flour, baking powder, and salt.
Bake in a loaf pan spayed with a non-stick cooking spray for about 1 hour or until it springs back when touched.
